🍗 Chicken Curry Recipe

Ingredients:

  • 500g chicken (cut into medium pieces)

  • 2 tbsp oil (coconut oil preferred)

  • 1 large onion (sliced)

  • 2 green chilies (slit)

  • 2 tsp ginger-garlic paste

  • 1 sprig curry leaves

  • 2 medium tomatoes (chopped)

  • 1 tsp chili powder

  • 1 tsp turmeric powder

  • 2 tsp roasted curry powder

  • 1 tsp garam masala (optional)

  • 1 cup thick coconut milk (or normal milk for lighter version)

  • 1 ½ cups water

  • Salt to taste

Method:

  1. Heat oil in a pot, add onion, green chilies, and curry leaves. Sauté until golden.

  2. Add ginger-garlic paste and fry for a minute.

  3. Stir in tomatoes, chili powder, turmeric, curry powder, and salt. Cook until the tomatoes are soft and oily.

  4. Add chicken pieces, mix well, and cook for 5–7 minutes until sealed.

  5. Pour in water, cover, and simmer for 15–20 minutes.

  6. Add coconut milk, reduce heat, and let it cook for another 5 minutes until thick and aromatic.

  7. Garnish with fresh curry leaves.

👉 Best served hot with rice, roti, or string hoppers.
