Ingredients:

  • 2 cups of chopped roti (flatbread)
  • 1 cup of mixed vegetables (carrots, cabbage, and bell peppers)
  • 1/2 cup of cooked chicken, shredded
  • 2 eggs
  • 2 tablespoons of soy sauce
  • 1 tablespoon of curry powder
  • 1 tablespoon of oil
  • Salt to taste
  • Pepper to taste
  • Chopped green onions for garnish

Instructions:

  • Heat oil in a large pan over medium heat.
  • Add the mixed vegetables and sauté until they are tender.
  • Push the vegetables to one side of the pan and crack the eggs into the other side, scrambling them until cooked.

  • Stir in the chopped roti and combine well with the vegetables and chicken.
