Ingredients:
- 2 cups of chopped roti (flatbread)
- 1 cup of mixed vegetables (carrots, cabbage, and bell peppers)
- 1/2 cup of cooked chicken, shredded
- 2 eggs
- 2 tablespoons of soy sauce
- 1 tablespoon of curry powder
- 1 tablespoon of oil
- Salt to taste
- Pepper to taste
- Chopped green onions for garnish

Instructions:
- Heat oil in a large pan over medium heat.
- Add the mixed vegetables and sauté until they are tender.
- Push the vegetables to one side of the pan and crack the eggs into the other side, scrambling them until cooked.

- Stir in the chopped roti and combine well with the vegetables and chicken.
- Add soy sauce, curry powder, salt, and pepper, mixing thoroughly to ensure even distribution of flavors.
- Cook for an additional 2-3 minutes, allowing the roti to crisp slightly.
