Ingredients:

  • 1 cup of Arborio rice
  • 2 cups of seafood broth
  • 200g of mixed seafood (shrimp, mussels, and squid)
  • 1 small onion, chopped
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of saffron threads
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  • Heat olive oil in a large skillet over medium heat.
  • Add chopped onion and garlic, sauté until translucent.
  • Stir in the diced red bell pepper and cook for another 2 minutes.
  • Add the Arborio rice and smoked paprika, stirring to coat the rice with the oil.
  • Pour in the seafood broth and add saffron threads, bring to a boil.
  • Reduce heat to low, cover, and simmer for 10 minutes.
  • Add the mixed seafood, season with salt and pepper, and cook for an additional 5 minutes until the seafood is cooked through.
  • Remove from heat and let it sit for a few minutes before serving.
  • Garnish with fresh parsley before serving.
