Ingredients:
- 1 cup of Arborio rice
- 2 cups of seafood broth
- 200g of mixed seafood (shrimp, mussels, and squid)
- 1 small onion, chopped
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 teaspoon of smoked paprika
- 1/2 teaspoon of saffron threads
- 2 tablespoons of olive oil
- Salt and pepper to taste
- Fresh parsley for garnish

Instructions:
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and garlic, sauté until translucent.
- Stir in the diced red bell pepper and cook for another 2 minutes.
- Add the Arborio rice and smoked paprika, stirring to coat the rice with the oil.
- Pour in the seafood broth and add saffron threads, bring to a boil.
- Reduce heat to low, cover, and simmer for 10 minutes.
- Add the mixed seafood, season with salt and pepper, and cook for an additional 5 minutes until the seafood is cooked through.
- Remove from heat and let it sit for a few minutes before serving.
- Garnish with fresh parsley before serving.
